How to Boil Eggs in Korean Style (hard-boiled, soft-boiled, medium-boiled)

Koreans usually eat boiled eggs with cold noodles such as jjolmyeon (spicy cold chewy noodles), naengmyeon (cold noodles), bibim-myeon (spicy noodles), makguksu (buckwheat noodles), etc.

These cold noodles are mostly eaten in summer time, because of the hot and humid weather. Boiled eggs add protein to the noodles and also relieve a burning tongue after eating spicy food.

There are three types of boiled eggs that Koreans love: soft-boiled egg, medium-boiled egg, hard-boiled egg. However, the state of soft-boiled eggs are somewhat different from “American favorite” soft-boiled eggs. As Koreans mostly eat soft-boiled eggs with noodles, we prefer “semiliquid (almost liquid but not runny)” egg yolk like the photo below. On the other hand, Americans prefer “liquid and runny” egg yolk, because they mostly eat soft-boiled eggs with bread. Koreans would rather fry over-easy eggs on the skillet, if they want “runny (liquid) egg yolk” for rice dishes such as bibimbap, fried rice or kimchi-fried rice. The liquid egg yolk works like a sauce or oil when you mix the vegetables and rice.

So, you can choose your favorite style among these three types of boiled eggs. My favorite is medium-boiled.  What is your favorite?

 

  1. Soft-boiled eggs

Put the eggs in cold water and cover it. Turn on the heat and bring water to a boil. (As the water temperature rises, the eggs are slowly cooked.) When the water reaches to a rolling boil, open the lid and lower the heat to medium. From then, cook the eggs for six minutes. After 6 minutes, turn off the heat, and take out the eggs. Put them in the cold water immediately, and peel them when they are cooled down. The center of egg yolk is “semiliquid”.

 

2. Medium-boiled eggs

Put the eggs in cold water and cover it. Turn on the heat and bring water to a boil. (As the water temperature rises, the eggs are slowly cooked.) When the water reaches to a rolling boil, open the lid and lower the heat to medium. From then, cook the eggs for five minutes. After 5 minutes, turn off the heat, and wait 4 more minutes while covering the pot again. (Eggs are still being cooked in hot water for 4 minutes after the heat is removed.) After 4 minutes, take out the eggs and soak them in cold water. After the eggs are cooled down, peel them. The center of egg yolk is “semisolid”.

 

3. Hard-boiled eggs

Put the eggs in cold water and cover it. Turn on the heat and bring water to a boil. (As the water temperature rises, the eggs are slowly cooked.) When the water reaches to a rolling boil, open the lid and lower the heat to medium. From then, cook the eggs for six minutes. After 6 minutes, turn off the heat, and wait 3 more minutes while covering the pot again. (Eggs are still being cooked in hot water for 3 minutes after the heat is removed.) After 3 minutes, take out the eggs and soak them in cold water. After the eggs are cooled down, peel them. The center of egg yolk is “soft solid (not very solid)”. This is more tasty than 100% solid egg yolk.
