Korean Soft Tofu Stew, “The Taste of Spicy Heaven”

“The taste of spicy heaven”
Soondubu Jjigae is one of Koreans’ soul foods!

*Ingredients
Soft Tofu 400g, large shrimp 4, Shiitake mushroom 0.7oz /20g, King oyster mushroom 40g, big green onion 1oz (25g), small green onion 1oz/25g, egg 1, onion 1.5oz/45g, pork 2.5oz/ 70g, Chili oil (3T) +salt(1t), fish sauce (1T), Soup soy sauce (1T), water (1/4 cup)

*Directions
1. Chop the onion into small pieces
2. Cut the shiitake mushrooms into halves and slice them
3. Cut the King oyster mushroom into halves and slice them…chop them up.
4. Chop the green onions
5. Heat the skillet, and add 1T of oil
6. When the pan is hot, place the pork sirloin on the pan
7. Sprinkle a pinch of salt and black pepper
8. Place the onion pieces and Big green onion slices on the side of the pork
9. Lower the heat into medium and wait until the bottom of sirloin turns golden brown
10. Flip the pork. This “Maillard reaction” creates a wonderful taste!
11. Stir the onion and green onion pieces
12. Cut the pork into small bites with scissors and cook until all sides turns brown
13. When the pork is well cooked, add mushroom pieces and sauté them
14. Place shrimps into a saucepan(an earthen pot or Dutch oven is good)
15. Transfer the pork and vegetables into the saucepan
16. Add 3T of chili oil and mix with the other ingredients(My chili oil is homemade, and has red pepper powder and garlic in it. You can learn how to make it here)
17. Add the Soft Tofu, and cut into big chunks
18. Add ¼ cup of water(or chicken broth or anchovy broth)
19. Turn on the heat, and cover the pot
20. When the stew boils, add 1T of fish sauce, 1T of soup soy sauce and 1t of salt
21. Add an egg in the center, and sprinkle chopped green onions
22. When the egg is slightly cooked, remove the heat and serve with cooked rice
